This recipe is absolutely delicious and a much healthier version of a traditional holiday side dish, mashed potatoes.
The Holidays can be challenging for those who like to eat healthy food, and keep an eye on their weight.
These mashed potatoes contain healthy fats from the olive oil and milk. I substitute coconut milk for the cow’s milk, because I am trying to avoid dairy. One could also use almond milk.
Mashed Potatoes with Garlic and Olive Oil – Gianni’s North Beach
Smashed Potatoes Ingredient List
- Yukon Gold Potatoes, 2 lbs.
- 1 head of garlic
- Extra virgin olive oil
- Coconut milk (or real milk, straight from the cow, if you tolerated dairy) 2 cups.
- Sea salt
- Black pepper, freshly ground
Start by slicing off the tip of the head of garlic, place it on a piece of aluminum foil, pour in a bit of olive oil. Then wrap it in the foil. Bake in the oven for 1/2 hour to 40 minutes.
Squeeze out the garlic into a pan and mash it up. Then add the milk. Place the pan on a low heat on the stove to keep it warm.
Boil the potatoes with skin on until done. You know they are done, when you can poke easily with a knife and it slides right out. Place the potatoes on a plate after cooking. Peel them and place in a bowl. Then crush them up to the desired consistency. Some people like them chunky and others like them smooth.
Pour the milk/garlic mixture over the potatoes and blend. Pour the olive over at the very end, along with the salt and pepper. Adjust to taste.
