This video does have a good tasty salad recipe.
But the guy doing the video is probably a bit too extreme.
He is on a 100 percent vegan and low fat diet.
Humans need some fat to be healthy. It just needs to be the right kind of fat.

Healthy fats are those that occur naturally in things like nuts, seeds, avocados, coconuts and grass fed beef.
A low fat, vegan diet may be a good cleansing diet on a temporary basis. A good alternative to a water fast for example, to clean out the body. But in the long run it may be unhealthy.
Personally I need to eat some meat to feel my best. I like to make sure it is organic and pasture raised as much as possible. I am all for eating a large amount of fresh, raw, organic vegetables and fruits. But a little healthy protein and fat is needed.
I have heard of people getting miraculous results from a low fat vegan diet. Only to get worse if they follow it for an extended period of time. Watch out for a deficiency of essential fatty acids, amino acids (protein) and vitamin B12.

I agree that a life-long 100% vegan diet isn’t a good idea. However, I’ve seen a number of his videos, and he does eat avocados, coconuts, and other sources of heathy fat. One thing to note is that some blood types do better on meat-free diets than others. If your body is telling you to eat meat (your BODY, not your appetite), then by all means, listen to it.
