Healthy dessert recipes are very popular. Everyone, especially children like to eat things that taste good.
And if it is good for you at the same time, all the better.
Today we have, No added Sugar, Healthy Tapioca Pudding.
Peachy Tapioca Pudding, Healthy Style
Sugar Free Tapioca Pudding
- 1 cup soaked raw cashews, soak overnight
- 2 cups pure water
- 1 cup chia seeds
- Cinnamon and vanilla for flavor
- 2 Tablespoons xylitol for sweetness
- Peach slices or your favorite fruit
- Coconut milk for topping
Start by blending the raw cashews and water in a blender.
Next blend in your flavorings. She uses cinnamon and vanilla in the video. You could experiment with different flavors if you like. Personally I like it with mint leaves, or you could substitute cooled mint tea for the water in step 1.
Add half the chia, blend on low briefly. Add xylitol as your sweetener, or maybe stevia could be used. Blend again. Finally add the rest of the chia and pulse the blender.
Pour it into a bowl and cool in the fridge for half an hour. Pour into fancy serving glasses and add a few slices of peach or another kind of fruit that you love. Top with a bit of coconut milk. Enjoy!
