Of course it takes a little longer to cook the Quinoa and chicken.

Quinoa is gluten free, in fact it is not even a true grain, so it’s great for those on a gluten free diet.

Cranberry Quinoa Salad

Here is what you need for this recipe

  • Quinoa
  • Chicken
  • Garbanzo beans
  • Cranberries
  • Cherries
  • Spinach
  • The dressing is honey, olive oil and fresh pressed garlic

cranberry quinoaSimmer 1 cup Quinoa in 1 1/2 cups water for about 10 minutes. Cook the chicken. Mix together Garbanzo beans, quinoa and chopped fruit.

Put your spinach on the plate, top with chicken and quinoa mix. Sprinkle on some dressing and enjoy.
